Ingredients:
For the cupcakes:
175 grams flower
3 eggs
20 grams vanilla sugar
150 grams granulated sugar
175 grams butter
350 grams strawberries
For the cream cheese frosting:
200 grams butter
350 grams powdered sugar
100 grams cream cheese
1,5 tablespoon lemon juice
Directions:
Cupcakes:
Step 1: Preheat your oven at 180degrees
Step 2: Cut up your strawberries in small cubes.
OPTIONAL: (Put a few slices or cubes of the strawberries aside to decorate with later)
Step 3 In a separate bowl add your room temperature butter and mix it on medium speed for about 2 minutes. Once its fully soft add your sugar and mix for 2-3 minutes.
Step 4
Add your eggs to the butter and sugar mixture and blend until the eggs are submerged. Once they're fully mixed in. add your flower, mix for another 3-5 minutes.
Step 4 Add your cubed strawberries to your mixture and fold this in your batter.
Step 5 Place your cupcake forms in your cupcake tin and pour your batter in (They will rise so don't fill all the way to the top.)
Step 6 Put them in the oven at 180 degrees for about 12-15 minutes. When done, place them on a cooling rack to cool down.
Step 7 Enjoy!!! Eat them just like this, or add a special touch by piping them with the cream cheese frosting and adding your saved strawberries on top. (wait for your cupcakes to cool down before you frost them.)
Directions cream cheese frosting:
Step 1:
Add your room temperature butter and the lemon juice and mix until soft.
Step 2: Now add the powdered sugar and mix until the butter and sugar became one.
Last add your cream cheese and mix till its fully combined. Enjoy!
