Ingredients:
800 grams shrimp
600 grams green beans
700 grams canned diced tomatoes
500 ml coconut milk
1 big onion (or 2 small ones)
3 cloves garlic
1 inch ginger
salt to taste
2 tsp hot curry powder
250 grams uncooked pandan rice
3 limes
Directions:
Step 1: Wash your rice and cook as it says on the packaging. In a separate pan steam your green beans.
Step 2: Clean your shrimp.
Step 3: Chop your onion in small cubes and grate your ginger and garlic, add to a hot pan (preferably a wok) with oil and all the spices and stir until the onions are golden brown.
Step 4: Now add your shrimp to the pan and cook, when the shrimp is done add the diced tomatoes and coconut milk.
Step 5: Lastly add your green beans and stir it all together on low heat for 2 more minutes.
Step 6: Serve with your pandan rice and lime on the side to squeeze on top and enjoy!
