Cashew Chicken

This easy, super fast homemade cashew chicken recipe is perfect for a quick weeknight meal that doesn’t compromise on flavor. With tender chicken pieces stir-fried to perfection, this dish comes together in just 20 minutes. The combination of the tender chicken with crunchy vegetables like bell peppers snap for a vibrant crunch. Finally, the cashews give it the perfect combination of a tasty, flavourful bite. Ingredients:

  • 500 grams chicken thighs

  • 250 grams basmati rice

  • 2 red bell peppers

  • 2 green bell peppers

  • 4 tbsp oystersauce

  • 2 tbsp soy sauce

  • 2 tbsp ketjap manis

  • 2cm ginger

  • 2 cloves garlic

  • 1 tbsp sesame oil

  • 100 grams cashewnuts

  • Sesame seeds to garnish

  • Spring onions to garnish

  • OPTIONAL: 2 tbsp Flour or corn starch to thicken the sauce

Directions:

Step 1: Grab a bowl big enough to marinade your chicken in and add the oystersauce, soy sauce, ketjap manis, sesame oil, ginger and garlic, mix it through.

Step 2: Cube up your chicken and add it to the bowl, leave it to marinade for 30 minutes.

Step 3: While the chicken is marinading slice your bellpepper in slices.

Step 4:

Wash and cook your rice following the directions on the packaging.

Step 5: After 30 mins add your chicken to a hot pan and keep stirring. When your chicken is fully cooked add the bell peppers and let them soften in the sauce.

Step 8: OPTIONAL: If you like a sauce with a thicker consistency, mix 1 tbsp of flour or cornstarch with a little bit of water and stir until there are no clumbs left, add this to your sauce and let it thicken. You can repeat this process until its to your liking.

Step 9: When your bell peppers are soft, sprinkle some sesame seeds and green onions and you're done!

Step 10: Serve with your rice and enjoy!
