Ingredients:

For the muffins:

  • 110 grams lightbrown sugar

  • 300 grams flower

  • 3 tsp cinnamon

  • 1 tsp baking powder

  • 1 tsp baksoda

  • A sprinkle of salt

  • 2 eggs

  • 250 ml milk

  • 110 grams of butter

  • A big apple or 2 small ones (Its best to use fresh one)

For the crumble:
  • 60 grams of flower

  • 40 grams of light brown sugar

  • 20 grams of granulated sugar

  • 50 grams of unsalted butter

Directions:

Step 1: Preheat your oven at 200degrees/ farenheit

Step 2: Peel your apples, remove the core and cut the apples in small cubes.

OPTIONAL: Put about 1/4th of the cubes aside, mix 1 tablespoon of granulated sugar together with 1 teaspoon of cinnamon and add this to your apples. Mix it well and put it aside for later

Step 3: Mix all your dry ingredients together in a bowl.

Step 4: In another bowl, whisk your eggs and melted butter together.

Step 5: Pour your egg/butter mixture into your dry ingredients while whisking.

Step 6: If everything is well combined, add your apple cubes and carefully fold them in your batter. (Its okay if your batter is not perfectly smooth.)

Step 7: Make your crumble mixture! Make sure your butter is fully at room temperature. Add all the ingredients for the crumble together in a bowl and mix this with your hands. Kneed and rub everything together with your fingers until you’ve reached your desired crumble structure.

Step 8: Take your muffin tin and fill this with either muffin or cupcake forms. Fill the forms with your batter, keep in mind that your muffins will rise so don’t fill them fully to the top!

Step 9: Take the apples that you put aside and add a few on top of all your muffins. Then add your crumble mixture on top of all of them.

Step 10: Place your muffins in the oven for about 20-25 minutes.

Step 11: When your muffins are done, place them on a cooling rack to cool down. Once they’re done it’s time to enjoy!!! Either serve the muffins to your guests or be delighted with this delicious snack on your own.

TIPS: -

  • To see if your cupcakes are done, poke them in the middle with a sharp knife or a long toothpick, if it comes out wet or covered in batter, your muffins are not fully baked. If it comes out clean, they’re done!

  • If you take the muffins out of the oven, immediately take them out of the tin to prevent over-baking them.

  • Use an icecream scoop to divide the batter evenly
